Though the garden may be entering it's dormancy for the Winter months, garden classes have been anything but sleepy! We've been busy saving seeds, cooking up seasonal veggies, learning about fermentation, medicinal properties of plants, and exploring the science behind what makes our garden grow. This time of year allows us an opportunity to slow down and reflect on our gratitudes and intentions for the New Year. Perusing photos from the past two months reminds me of all the reasons I am grateful to be a part of the Springwater community. Have a look for yourself!
Looking ahead to the new year, we are excited to be transforming the garden space for higher yields. We hope to realize a dream of produce from our kitchen being utilized in the outdoor kitchen our foxes worked so hard to fundraise for last year! Turning a portion of our garden space into rows that we can irrigate will help us accomplish that goal! Sooner than we know it, it will be time to start seeds and work the soil.
