It's hard to believe September has passed us by so quickly! The first weeks of school entailed celebrating the color and bounty of the garden and exploring the changes that have taken place since the last day of school. In the garden, we're watching the transformation as the days grow shorter and nights colder. With early Fall weather, we're preparing the garden to be mulched and cover cropped as well as getting overwintering bulbs, garlic and onions in the ground.
Our upper grades electives are off to a great start with Cooking students whipping up fresh salsa and Lotions & Potions class learning about and making elderberry syrup. Our Green Team is learning more about climate change and how we can organize ourselves to make a difference.
Currently we are looking for a large dump of wood chips. We are signed up on Chip Drop but because of our location we are usually passed up for delivery! Please contact Katherine at [email protected] if you have any great leads on wood chips.

Apple Cabbage Slaw
Ingredients:
¼ head cabbage
1 small carrot
1 apple
Small pinch of salt
Optional: chopped cilantro
Dressing:
1 Tablespoon Olive Oil
1 Teaspoon Apple Cider Vinegar
1 Tablespoon Honey
1 Tablespoon Lime Juice
Instructions:

Apple Cabbage Slaw
Ingredients:
¼ head cabbage
1 small carrot
1 apple
Small pinch of salt

1 Tablespoon Lime Juice
Instructions:
- Wash Hands
- Peel the leaves of the cabbage apart and chop into bite sized pieces
- Grate the carrot and mix with the cabbage
- Core the apple and then chop into bite sized pieces, add to carrot and cabbage mix.
- Combine dressing ingredients in separate bowl and whisk to combine. Chop and add in cilantro if desired.
- Pour dressing into mixing bowl and toss with a pinch of salt.
- Serve and enjoy!
